🥞 Homemade Gluten-Free Pancakes
Fluffy, golden, and delicious—perfect for a cozy breakfast!
Ingredients:
1 cup gluten-free all-purpose flour
2 tablespoons light brown sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1 cup milk (dairy or your favorite non-dairy option)
2 tablespoons melted butter (or coconut oil)
1 teaspoon vanilla extract
Instructions:
Combine dry ingredients:In a large bowl, whisk together the gluten-free flour, brown sugar, baking powder, and salt.
Mix wet ingredients:In a separate bowl, beat the egg. Then add milk, melted butter, and vanilla extract. Mix until well combined.
Make the batter:Pour the wet ingredients into the dry ingredients. Stir gently until just combined. It's okay if the batter is a little lumpy—don’t overmix!
Cook the pancakes:Heat a nonstick skillet or griddle over medium-high heat. Lightly grease with butter or oil.
Portion and flip:Pour about 1/4 cup of batter for each pancake onto the hot pan. Cook until bubbles form on the surface and the edges look set (1–2 minutes). Flip and cook the other side until golden brown.
Repeat and serve:Continue with the remaining batter. Serve warm with your favorite toppings like maple syrup, fresh berries, or nut butter.
