Tomato Sauce

Quick Red Sauce (GF)

Ingredients:

  • Two 28 oz cans of whole tomatoes (Cento San Marzano preferred)

  • 1 large bin (about 16 oz) white mushrooms, rough cut

  • 3 cups water

  • 6–8 garlic cloves

  • 2 fresh basil leaves

  • ½ cup olive oil

  • Sea salt to taste

Directions:

1. Prepare the Mushroom Broth In a pot, bring 3 cups of water to a boil. Add rough-cut mushrooms and cook for 30–45 minutes, reducing liquid to about 1 cup.

2. Sauté the Garlic In a separate pan, heat olive oil over medium-low heat. Add the garlic cloves and cook until lightly browned and softened. Set aside.

3. Start the Tomato Base In a large saucepot, add the canned tomatoes and bring to a boil.

4. Combine and Blend Add the mushroom broth, garlic, and infused oil into the tomato pot. Add basil and a pinch of sea salt. Use an immersion blender to blend until smooth.

5. Simmer the Sauce Reduce heat to low and simmer for about 45 minutes, stirring occasionally, until thick and velvety.
