Chicken Cacciatore

🍗 Hunt’n Buddy Chicken Cacciatore

Ingredients:

  • 8–10 bone-in, skin-on chicken thighs

  • 3 Tbsp olive oil (or use rendered chicken fat from baking)

  • 3–4 cloves garlic, minced

  • 1 large onion, diced small

  • 8 oz mushrooms, sliced (optional but traditional)

  • 1can of pitted black olives (strained)

  • 1 can (28 oz) crushed tomatoes OR whole peeled tomatoes, crushed by hand

  • 1 cup chicken broth

  • 1/2cup dry red wine or sherry

  • 2 tsp Hunt’n Buddy All Purpose Seasoning

  • 1 tsp dried oregano

  • ½ tsp red pepper flakes (optional)

  • Fresh basil or parsley for garnish

Instructions:

  1. Season & Bake Chicken:

    • Preheat oven to 400°F.

    • Place chicken thighs on a foil-lined baking sheet.

    • Rub with olive oil and generously season with Hunt’n Buddy All Purpose Seasoning.

    • Bake for 25–30 minutes until skin is golden and crisp.

  2. Make the Sauce:

    • In a large skillet or Dutch oven, heat 2–3 Tbsp olive oil.

    • Add garlic and onion, sautĂŠ until fragrant.

    • Add crushed tomatoes, chicken broth (or wine), oregano, red pepper flakes, and 1 tsp Hunt’n Buddy All Purpose Seasoning.

    • Simmer uncovered for 10–15 minutes until slightly thickened.

  3. Combine Chicken & Sauce:

    • Transfer baked chicken into the skillet with the sauce. **(pour in the rendered chicken juices for extra flavor.)

    • Spoon sauce over chicken and simmer on low for 15–20 minutes until chicken is cooked through and flavors blend.

    • Add the can of black olives and mix, then remove from heat.

  4. Serve:

    • Garnish with fresh basil or parsley.

    • Serve over pasta, rice, mashed potatoes, or with crusty bread.
