đ Huntân Buddy Chicken Cacciatore
Ingredients:
8â10 bone-in, skin-on chicken thighs
3 Tbsp olive oil (or use rendered chicken fat from baking)
3â4 cloves garlic, minced
1 large onion, diced small
8 oz mushrooms, sliced (optional but traditional)
1can of pitted black olives (strained)
1 can (28 oz) crushed tomatoes OR whole peeled tomatoes, crushed by hand
1 cup chicken broth
1/2cup dry red wine or sherry
1 tsp dried oregano
½ tsp red pepper flakes (optional)
Fresh basil or parsley for garnish
Instructions:
Season & Bake Chicken:
Preheat oven to 400°F.
Place chicken thighs on a foil-lined baking sheet.
Rub with olive oil and generously season with Huntân Buddy All Purpose Seasoning.
Bake for 25â30 minutes until skin is golden and crisp.
Make the Sauce:
In a large skillet or Dutch oven, heat 2â3 Tbsp olive oil.
Add garlic and onion, sautĂŠ until fragrant.
Add crushed tomatoes, chicken broth (or wine), oregano, red pepper flakes, and 1 tsp Huntân Buddy All Purpose Seasoning.
Simmer uncovered for 10â15 minutes until slightly thickened.
Combine Chicken & Sauce:
Transfer baked chicken into the skillet with the sauce. **(pour in the rendered chicken juices for extra flavor.)
Spoon sauce over chicken and simmer on low for 15â20 minutes until chicken is cooked through and flavors blend.
Add the can of black olives and mix, then remove from heat.
Serve:
Garnish with fresh basil or parsley.
Serve over pasta, rice, mashed potatoes, or with crusty bread.
