šŸ‹ Gluten-Free Chicken Francese

with Cup4Cup & Hunt’n Buddy All Purpose Seasoning

Ingredients

  • 4 boneless, skinless chicken breasts (pounded to ½-inch thick)

  • ½ cup Cup4Cup Gluten-Free Flour

  • 2 tsp Hunt’n Buddy All Purpose SeasoningĀ (plus extra for garnish)

  • 2 large eggs

  • 2 tbsp water

  • 4 tbsp unsalted butter (sub with plant based butter for LF)

  • 3 tbsp olive oil

  • 1 cup low-sodium chicken broth

  • ½ cup dry white wine (or extra broth)

  • 1 large lemon (zested & juiced; reserve slices for garnish)

  • 3 tbsp fresh parsley, finely chopped

  • Salt & pepper, to taste

Instructions

  1. Prep the Chicken

  2. Egg Wash

    • In another shallow bowl, whisk together eggs and water until frothy.

  3. Dredge & Coat

    • Lightly dredge chicken in the seasoned flour, shaking off excess.

    • Dip into egg mixture, allowing extra to drip off.

  4. Pan Fry

    • In a large skillet, heat 2 tbsp butterĀ and 3 tbsp olive oilĀ over medium heat.

    • Cook chicken 3–4 minutes per side until golden brown. Transfer to a plate.

  5. Make the Sauce

    • To the same skillet, add wineĀ and chicken broth.

    • Stir, scraping up browned bits. Simmer 3 minutes.

    • Add lemon zest & juice. Reduce heat to low and whisk in remaining 2 tbsp butterĀ until sauce is silky.

  6. Finish

    • Return chicken to the pan, spoon sauce over top, and simmer 2–3 minutes.

    • Sprinkle with fresh parsley and extra Hunt’n Buddy seasoning if desired.

  7. Serve

    • Plate chicken with lemon slices and drizzle with sauce.

    • Pair with mashed potatoes, rice, or gluten-free pasta for a complete meal.

Chef’s Tips

  • For extra tang, add thin lemon slices to the sauce while it simmers.

  • If making ahead, store chicken and sauce separately, then reheat gently before serving.
