šŸ“ Chicken Saltimbocca

Ingredients:

  • 4–6 boneless chicken breasts (pounded thin)

  • ½ cup all-purpose flour (or gluten-free blend)

  • 2 Tbsp Hunt’n Buddy All Purpose Seasoning

  • 6 slices prosciutto

  • 6 fresh basil leaves (or sage leaves, traditional style)

  • ½ cup olive oil or light frying oil

  • 1 cup dry white wine (or chicken broth)

  • ½ cup chicken broth

  • 2 Tbsp unsalted butter

  • Freshly grated Parmesan cheese

  • Cooked spaghetti (or pasta of choice), for serving

Instructions:

  1. Prep the Chicken

  2. Layer & Fry

    • Place a slice of prosciutto and a basil leaf on top of each piece of chicken (press so it sticks).

    • Heat oil in a skillet over medium-high heat.

    • Fry chicken 3–4 minutes per side until golden and crisp.

    • Transfer to a wire rack to rest.

  3. Make the Sauce

    • In the same pan, pour off excess oil, leaving browned bits.

    • Add wine and broth, scraping the bottom to deglaze.

    • Simmer until reduced slightly.

    • Stir in butter for a silky finish.

  4. Finish the Dish

    • Return chicken to the pan and spoon sauce over the top.

    • Sprinkle with Parmesan cheese.

    • Simmer gently for 2–3 minutes to marry flavors.

  5. Serve

    • Plate chicken over a bed of spaghetti.

    • Spoon extra sauce on top.

    • Garnish with more Parmesan and fresh basil.
