š“ Chicken Saltimbocca
Ingredients:
4ā6 boneless chicken breasts (pounded thin)
½ cup all-purpose flour (or gluten-free blend)
2 Tbsp Huntān Buddy All Purpose Seasoning
6 slices prosciutto
6 fresh basil leaves (or sage leaves, traditional style)
½ cup olive oil or light frying oil
1 cup dry white wine (or chicken broth)
½ cup chicken broth
2 Tbsp unsalted butter
Freshly grated Parmesan cheese
Cooked spaghetti (or pasta of choice), for serving
Instructions:
Prep the Chicken
Pound chicken breasts thin between parchment paper.
Lightly coat in flour mixed with Huntān Buddy All Purpose Seasoning.
Layer & Fry
Place a slice of prosciutto and a basil leaf on top of each piece of chicken (press so it sticks).
Heat oil in a skillet over medium-high heat.
Fry chicken 3ā4 minutes per side until golden and crisp.
Transfer to a wire rack to rest.
Make the Sauce
In the same pan, pour off excess oil, leaving browned bits.
Add wine and broth, scraping the bottom to deglaze.
Simmer until reduced slightly.
Stir in butter for a silky finish.
Finish the Dish
Return chicken to the pan and spoon sauce over the top.
Sprinkle with Parmesan cheese.
Simmer gently for 2ā3 minutes to marry flavors.
Serve
Plate chicken over a bed of spaghetti.
Spoon extra sauce on top.
Garnish with more Parmesan and fresh basil.
