Biscuits (GF)
Ingredients:
2 cups gluten-free all-purpose flour (Cup4Cup recommended)
3 tsp baking powder
1 tsp salt
⅓ cup cold butter, cubed
⅔ cup milk (2% or non-dairy alternative)
Directions:
1. Mix the Dry Ingredients In a large bowl, whisk together the gluten-free flour, baking powder, and salt.
2. Cut in the Butter Add cold butter cubes and cut them into the flour mixture using a pastry cutter or fork until it resembles coarse crumbs.
3. Add the Milk Pour in the milk and stir gently until the dough just comes together. Do not overmix.
4. Shape the Biscuits Turn dough out onto a lightly floured surface. Pat to about 1-inch thickness and cut into rounds with a biscuit cutter or glass.
5. Bake Place on a parchment-lined baking sheet and bake at 450°F (230°C) for about 10 minutes, or until golden brown.
Pro Tip: Brush the tops with melted butter right out of the oven for a rich, flaky finish. These biscuits are perfect for breakfast sandwiches or alongside soups and stews.
