Gluten Free Dumpling Wrappers

Dumpling Wrappers (GF)
Ingredients:
2½ cups gluten-free all-purpose flour (about 300 g)
¼ tsp salt
⅔ cup just-boiled hot water
⅓ cup ice-cold water
Directions:
1. Mix Dry Ingredients In a medium bowl, whisk together the gluten-free flour and salt.
2. Add Hot Water Slowly pour in the just-boiled water while stirring continuously with a spoon or chopsticks. Mix until crumbly.
3. Add Cold Water Gradually add the ice-cold water and continue stirring until a dough forms.
4. Knead Transfer to a lightly floured surface and knead gently for 5–7 minutes until the dough is smooth and elastic.
5. Rest the Dough Cover with plastic wrap or a damp towel and let rest for 30 minutes at room temperature.
6. Roll and Cut Roll the dough into a log and slice into small pieces (about 1-inch thick). Roll each piece into a thin round wrapper, dusting with flour to prevent sticking.
Pro Tip: Keep wrappers covered with a damp towel while working to prevent drying out. These gluten-free wrappers are perfect for pot stickers, wontons, or steamed dumplings.
