Hunt’n Buddy Beef Kababs & GF Pita Bread

🥩 Beef Kababs
Ingredients:
1.5 lbs beef sirloin or ribeye, cut into 1.5-inch cubes
2 tbsp Hunt’n Buddy All Purpose Rub
2 tbsp olive oil
1 tbsp lemon juice
1 tsp garlic powder
1 red onion, cut into chunks
1 green bell pepper, cut into chunks
1 red bell pepper, cut into chunks
Skewers (if wooden, soak for 30 minutes)
Instructions:
In a large bowl, combine the olive oil, lemon juice, garlic powder, and Hunt’n Buddy Rub.
Toss beef cubes in the marinade. Cover and refrigerate for at least 1–2 hours (or overnight for deeper flavor).
Thread beef, onion, and peppers onto skewers.
Preheat grill or grill pan to medium-high heat.
Grill skewers for 8–10 minutes, turning occasionally, until beef reaches desired doneness.
Let rest 5 minutes before serving.
🫓 Homemade Gluten-Free Pita Bread
Ingredients:
2 cups gluten-free all-purpose flour blend (with xanthan gum)
1 ½ tsp baking powder
¾ tsp salt
1 tbsp olive oil
¾ cup warm water (plus more if needed)
Instructions:
In a large bowl, whisk together flour, baking powder, and salt.
Add olive oil and warm water. Mix until a dough forms. If dry, add 1 tbsp more water at a time.
Divide into 6 equal pieces. Roll each into a ball, then flatten into ¼-inch thick rounds.
Heat a cast iron skillet or non-stick pan over medium-high heat.
Cook each pita for about 2 minutes on one side until bubbles form, then flip and cook 1–2 minutes more.
Wrap cooked pitas in a clean towel to keep warm and soft.
🧄 Optional Garlic Yogurt Sauce
Quick Blend:
1 cup Greek yogurt (you can substitute with plain coconut yogurt)
1 clove garlic, minced
1 tbsp lemon juice
Half a cucumber (shredded with cheese grader into bowl)
Pinch of salt & pepper
Stir together and drizzle over kababs wrapped in your fresh GF pita.
📝 Serving Ideas:
Add sliced cucumbers, cherry tomatoes, and a sprinkle of feta
Serve with hummus or tzatziki on the side
