GF Pita bread / Chalupa bread

Chalupa / Pita (GF)
Ingredients:
2 cups gluten-free all-purpose flour (Cup4Cup or similar)
1 tbsp. baking powder
½ tsp salt (or to taste)
1 tbsp. olive oil
1 cup milk (dairy or non-dairy alternative)
Directions:
1. Mix the Dry Ingredients a large bowl, combine the gluten-free flour, baking powder, and salt. Stir to blend evenly.
2. Add Wet Ingredients Pour in the milk and olive oil. Stir until a sticky dough forms.
3. Knead the Dough Lightly flour your hands and surface, then knead gently until the dough becomes smooth and soft.
4. Shape the Chalupas / Pitas Divide dough into equal portions (about 6–8). Roll each portion into a small, flat circle about ¼ inch thick.
5. Cook Heat a lightly oiled skillet or griddle over medium heat. Cook each chalupa or pita for 1–2 minutes per side, until puffed and golden brown.

Pro Tip: For extra softness, cover the cooked pitas with a clean towel to trap steam as they cool. These can be used for tacos, gyros, or as a soft base for flatbread pizzas.
